The Lutefisk Tradition

Our November/December issue features the annual lutefisk supper in Summit, a town of about 290 people in southern Roberts County. Hundreds of people headed for Summit on Nov. 4 for the town's 79th such gathering. Managing Editor John Andrews traveled to Summit for last year's supper with a camera, notebook and an empty stomach. Here are a few extra photos that didn't make the magazine.

Hundreds of diners fill the Summit Community Hall, sometimes arriving as much as 90 minutes early. -
The Olsen Fish Company of Minneapolis supplies all of the lutefisk for Summit's feed, as well as novelty napkins. -
The kitchen is always busy, with volunteers constantly prepping lutefisk filets for the pot. -
Kathy Quale heads the butter melting station. She and her grandchildren, Patrick and Maria Quale, melted 108 pounds of butter last year. -
Summit's Community Hall was built in 1952.
