Æbleskiver : Step by Step

The æbleskiver-making process is a bit mysterious to those who did not grow up with the Danish pancakes. It requires a special pan and a knitting needle, chopstick or fork for turning. To view the recipe, click here. Photos by Chris Moore.

Add the batter to the preheated æbleskiver pan, filling the indentations about 2/3rds full. -
Get out your knitting needle and prepare to turn the batter when it turns bubbly and a crust starts to form. -
The degree of roundness will depend on how many times you turn the 'skiver. -
Cook until the insides are no longer doughy. -
Serve with powdered sugar and jam, cinnamon sugar, maple syrup or whatever sounds good.
