Æbleskiver : Step by Step

The æbleskiver-making process is a bit mysterious to those who did not grow up with the Danish pancakes. It requires a special pan and a knitting needle, chopstick or fork for turning. To view the recipe, click here. Photos by Chris Moore.

Add the batter to the preheated æbleskiver pan, filling the indentations about 2/3rds full.

Get out your knitting needle and prepare to turn the batter when it turns bubbly and a crust starts to form.

The degree of roundness will depend on how many times you turn the 'skiver.

Cook until the insides are no longer doughy.

Serve with powdered sugar and jam, cinnamon sugar, maple syrup or whatever sounds good.
